Today I would like to share my recipe for Easy Basic homemade pancakes with you! This is such a classic breakfast that my family absolutely loves. I mean, who doesn’t like fluffy pillow-ly pancakes for breakfast?
This is usually a weekend treat for my family. We all sit down and chit-chat while having a glass of fresh juice and enjoying warm delicious pancakes together because this is a recipe for happiness.
I am still making this on special occasions or a cozy weekend, especially when I want to put some effort to make breakfast. This is the way to go.
In this recipe, you will learn how to make these easy Basic homemade pancakes with step-by-step instructions! Totally beginner-friendly and all moms will thank me for this!

What ingredients do you need for these Easy Basic Homemade Pancakes?
Jump to Recipe- pastry flour – you can also substitute with all-purpose flour.
- whole Milk – I prefer whole milk for its richness, but skimmed milk also works!
- melted unsalted butter – good quality butter will have more decadent flavours.
- sugar – I sometimes use monk fruit sweetener, but it is still very delicious.
- baking powder – I used aluminum-free baking powder.
- eggs
- baking soda – don’t skip baking soda for the fluffiness.
- vanilla extract
- Some chopped fruits – I always love berries, but any fruit of your choice will work!
Pro tips for these Easy Basic Homemade Pancakes
- Cook these pancakes with medium-high heat. Or you may burn your pancakes!
- Make sure you whisk together sugar and egg first to make sure the sugar is dissolved.
- Combine all the dry ingredients first before adding them to the wet ingredients.
- Making these delicious fluffy pancakes from scratch is very easy, patience and practice are the keys.
- Don’t skip the baking powder and baking soda to ensure you get fluffy pancakes.
- I use a 28-inch frying pan.
- Don’t use too much cooking oil to oil the pan, because the batter always has butter in it.
How far in advace can I premake the batter of these Easy Basic Homemade Pancakes?
You can make the batter the night before, and keep it in the fridge overnight. The batter needs to be rest for at least 10 minutes anyway, so the the gluten in the flour can relax and the starch grains can swell. Also, by letting the batter rest for 10 minutes, the baking powder will have time to create bubbles of carbon dioxide gas, aka the pancakes will be super fluffy and airy.
Resting the pancake batter is very important because it will improve the pancakes texture. 🙂
In what temperature should we cook these Easy Basic Homemade pancakes?
I cooked mine in medium-high heat in my old stove. However, I have changed my stove this year and because the new stove is more powerful than my old ones, I only need to use medium heat now. And I always test the temperature by cooking a small pancake to see.
I also always like to describe cooking as driving. If the pancake is burnt and too brown, turn the heat down a bit, as you would slow down if you are driving too closely to the car ahead.
Cooking is a lot of experimenting so be patient and keep cooking. You will know what temperature to use. 🙂
Why do I use aluminum-free baking soda for these easy basic homemade pancakes, or baking in general?
I have tasted so many failed baking good before with regular baking soda. The taste was very unpleasant, it is like you are eating a piece of metal, no matter how much butter and sugar you have added to it.
Turned out it was all because of the baking soda.
I have read a blogpost on Epicurious, they have the perfect explaination: Why Aluminum-Free Baking Powder is Better
They said “”Baking powders can be fast-acting, slow-acting, or double-acting, depending on the acid or acids they contain,”she writes. Some acids react with liquid, while others react with heat. Double-acting powders usually contain two acids—one for liquid, the other for heat.”
“Aluminum-free baking powders react with liquid and not with heat. “
So the only risk of using aluminum-free baking powders is you won’t get a good rise if you are a slow-baker.
Now, I just add the baking powders into the batter right before I use the batter, so, adter the resting time. 🙂
Easy Basic homemade pancakes
Equipment
Ingredients
- 120 g pastry flour
- 120 ml whole Milk
- 50 g melted unsalted butter
- 20 g sugar
- 1 tbsp baking powder
- 2 large eggs
- 1 tbsp baking soda
- 1 tbsp vanilla extract
- Some chopped fruits
Instructions
- Whisk together eggs and sugar until sugar is dissolved, around 10 seconds.
- Then add milk, melted butter, and vanilla extract.
- Mix well.
- Combine flour, baking powder, and baking soda.
- Sift the flour into the batter.
- Stir until incorporated. Do not over mix or you will have rubbery pancakes.
- Let it rest for 10 minutes.
- Preheat a non-stick pan, and add a little bit of oil.
- Pour some batter onto the pan, I used a large spoon so this is easier to control the portion.
- Flip over when bubbles form on top of the pancake.
- cook until the second side is golden brown. Repeat this process until the batter is used up.
- Serve it with butter and maple syrup, and top with fruits.
